It’s the soil that makes this region so special. The grapes, originally the Tokay variety and now particularly the zinfandel (among many others), love this loamy dirt, which is blessed with the perfect amount of sand so the water drains in just the right manner. This earthy recipe allows the fruit to grow not too fast, not too slow.
